Pinkeye is only mentioned in the book once. He is Napoleon's food taster. As the novel progresses, Napoleon becomes paranoid and tells the animals that he could die if someone (such as Snowball) poisons his food. So he hires Pinkeye, another pig, to taste his food before Napoleon eats it. Pinkeye helps in illustrating the final law of Animalism that Napoleon creates, "All animals are equal, but some animals are more equal than others." In this case, Napoleon is "more equal" than Pinkeye because, if he dies, Napoleon would not care, and would just simply replace him.
